Quick answer
Any meat from the sacrifice left to the third day must be burned. Holy things were not to be allowed to spoil or be treated carelessly.
Overview
What remained beyond the permitted time had to be destroyed by fire, protecting the offering from decay and the worshiper from defilement. This guarded the holiness of what had been given to God. It teaches that God's gifts and worship are to be handled with reverent care, never casually.
