Quick answer

When all is subjected, the Son also subjects Himself so God may be all in all. It matters because it points to the final, undivided supremacy of God.

Overview

Paul describes the goal of redemption: the Son's voluntary subjection to the Father once His mission is complete, so that God is everything in everyone. This is the Son's eternal, willing role in the harmony of the Trinity, not a loss of deity. The verse sets the believer's gaze on the ultimate end when God's glory fills all.
