Quick answer

The fat, including the entire fat tail, is offered to God from the lamb. The richest portions, including the prized fat tail, belong to the LORD.

Overview

The fat tail of certain sheep was especially rich and valued, and it too was devoted to God along with the inner fat. This gave God the choicest portion of the offering. The reservation of the best for God expresses the heart of true worship, that He deserves our finest, a devotion modeled perfectly by Christ's wholehearted offering of Himself.

Christ at the center

Every sacrifice, every priest, and every day of atonement points beyond itself to the one perfect offering and the great High Priest who, by his own blood, makes the unclean holy once for all.

How Leviticus 3:9 points to him is part of the one story that runs through all Scripture — meet Jesus at the heart of the web, or follow a trail that traces him from Genesis to Revelation.
